I simply don't think Elayne should be able to reproduce, and I have always loved the Mat/Moi pairing, just imagine how good looking their children would be

Elayne can't be pretty. She's too inbred on both sides. Moiraine is pretty because she's a lovechild and her mother was a scholar, not a stupid noble. Nature has its way to create diversity in DNA. Mat/Mo would technically get, if not gorgeous, pretty and healthy children. I agree.

Is Mat sort of fat in the beginning of the series? I always thought he was slender, but I remember someone saying something like he wasn't...

 

The babies can be rolly polly, but M/M are high energy, so their kids would probably be skinny little things as they got bigger.

 

Mat's kind of immature, but so is Moiraine really.

 

And why am I thinking about it so much anyway?

No, he was quite skinny. Perrin was kind of fat in the beginning. I don't know if that has changed.
